What's in my cookie jar? Part 1


This weekend was full of baking, and I thought I'd share some recipes. Sunday I made no-bake chocolate oatmeal cookies. These are one of my favorites, great for kids to make, and so fast and easy!

For this recipe you'll need:

1/2 cup butter/margarine
2 cups sugar
1/2 cup milk
4 tablespoons cocoa
1/2 cup creamy peanut butter
3-3 1/2 cups dry quick-cooking oats
2 teaspoons

In a saucepan melt butter over medium low. Add sugar and cocoa until dissolved. Add milk. Let this mixture come to a boil and let boil 1-2 minutes, stirring constantly. This step is very important, or the cookie's wont set!

After boiling for 1-2 minutes, remove from heat. Stir in peanut butter until melted. Now add Oats (until fairly stiff, about 3 - 3 1/2 cups) and stir until all the oats are coated.

Drop cookies onto parchment paper or tin foil and let set for about 20 - 30 minutes.

Kids can mold these into shapes after they cool a bit, or use cookie cutters to make fun shapes!
